What little sheet music there is, is in the published books, which, possibly unfortunately for you, contain only a few of the secular songs on his albums. We have no details of any unrecorded "sacred music". We know that he recorded Joseph, Country Boy and Remember Bethlehem(aka The Intake School Carol), and although there are strong hints that he wrote more than this during his time teaching at Intake School, no record remains of any of that material so far as we have been able to determine.
There are two books that include music: The Jake Thackray Song Album Volume 1 (there was never a volume 2) (details here: http://www.jakethackray.com/content/view/278/89/) and another one, I believe it’s called Jake Thackray And Songs), which I have only once seen mentioned (I have a copy at home and some day I will include details on this site). His other book is Jake’s Progress, which contains lyrics only http://www.jakethackray.com/content/view/277/89/). All three books are out of print, but copies of Volume 1 and Jake’s Progress come up reasonably frequently on eBay. To add to Keith’s reply, you will find the lyrics and guitar tabs to all three of these pieces (Joseph, Country Boy and Remember Bethlehem) in the SONGS area on this site.
Almost as good as the whole sheet music I would have thought. I think any of them would fit in fine in a school or church carol concert/service.

I have arranged a version of Joseph for piano, flute and choir and will happily let people have it. Please only ask if you intend to use it, rather than for curiosity as the files will be quite big.
It will be performed again this Christmas and hope to have the choir recorded this time.

The arrangement is based on a ‘by ear’ transcription purely for educational purposes (I work partly as a musician and partly in education). It should not be used for profit. I dug this book out yesterday. It’s called The Jake Thackray Album, quarto 16pp plus semi-stiff cover, published in 1969 by Harvard Music, London W1, sole selling agents Campbell, Connelly & Co Ltd, 10 Denmark Street, London WC2, price 7/6 (37.5p).
Has anyone else got, seen or heard of this book? The only time I have seen it mentioned was on eBay, when Mr Completist here bought it – for £30!
The front cover has a larger version (ie there is more content) of the pic from the cover of Live Performance, which is attributed to "Dunstan Pereira U.S.A". The back cover says "All the songs in this album are from the EMI LP Record SCX 6178", with a pic of the LW&T cover.
Inside are a short blurb, two nice pics, and just six songs: La Di Dah (sic), The Cactus, Scallywag, Black Swan, Lttle Black Foal and Ulysses. Music is treble clef only, single note melody only, with chord indications. And the lyrics, of course.
For the guitarists among you, "La-di-dah" (in D) has chords of Dmaj7 C#m7sus4 F#7 Bm7 E9 A7 for the first line (up to "eye wash"). In Ulysses (in Em) the chord just before the chorus ("When my" – B flat A) is shown as D7(9b) (ie D7 flattened 9th). The rest seem pretty straightforward.
One day I’ll put a scan or two on the site and transcribe the blurb. Honestly! I retire in April and confidently expect to spend some time on my backlog of transcriptions and other updates.
